July is also one of the hottest months so we want to keep cool in the shade – and in our kitchen. Our Barley Corn Salad is a cool, refreshing dish that is full of flavor – and the bounty of a summer garden. If you don't mind a little heat in the kitchen, turn on your oven and mix up a batch of our Red, White and Blueberry Muffins. They are great, wholegrain treat and the perfect way to start your 4 th of July celebration!

Barley Corn Salad
Barley is another cholesterol fighting grain, with a slightly nutty flavor
Ingredients
1 cp War Eagle Barley
3 cps water
In medium saucepan stir together barley & water; bring to boil. Turn heat down to simmer; cover and cook for 40 minutes or until water is absorbed. Let cool.
¼ cp lemon juice
1 Tbsp vegetable oil
½ tsp salt
1 cp corn ( fresh, frozen or canned)
1/8 tsp black pepper
½ cp tomato, diced
½ cp onion, diced
½ cp cucumber, diced
½ cp bell pepper diced
In a small bowl, whisk together the lemon juice, oil, salt & pepper. In large bowl stir together cooked barley and rest of ingredients. Pour dressing over all; toss to coat.

Red, White and Blueberry Muffins
This lowfat recipe combines whole grains and berries to make a healthy & festive breakfast!
1 cp War Eagle White Wholegrain Flour
½ cp War Eagle White Cornmeal
½ cp sugar or honey
2 tsp baking powder
1 tsp baking soda
½ cp fresh or frozen blueberries
½ cp fresh or frozen raspberries
1 cp plain nonfat yogurt
3 lg egg whites
Preheat oven to 500° and spray a 6-cp muffin tin with nonstick cooking spray. In medium bowl, combine dry ingredients. Gently mix in the blueberries. In a separate bowl, beat together the yogurt and egg whites. Add to flour mixture and stir just until moistened, about 30 seconds.
Fill cups about ¾ full. Place tin in oven & reduce heat to 400°. Bake until muffins are lightly browned and a toothpick inserted in center comes out clean, about 25 – 30 minutes. Let cool in tin for 10 minutes before removing muffins. Makes 6
