Kids are taking the bus ride back to school and schedules are quickly filling up with sports, social activities and homework. Where does one pencil in a quick yet good-for-you dinner? Millie is here to help! Mac & Cheese is a kid favorite but doesn’t always have the nutrition the little ones need and tends to come with a mystery powder that slightly resembles cheese. I like to cook up a very affordable box of Back to Nature Organic Macaroni and Cheese and toss in a scoop of organic quinoa. The quinoa takes on the cheese flavor and adds a complete protein (quinoa contains all nine of the essential amino acids). So there you have it, a delicious, healthy and easy meal for everyone! – Miss Millie
MacQuinoa & Cheese
- 1/4 cup War Eagle Mill Organic Quinoa
- 1/2 cup water
- 1/8 tsp salt
- 1 Box Organic Macaroni & Cheese (I used Back To Nature)
- 1 Tbsp butter
- 3 Tbsp milk (add more if needed)
Bring quinoa and water to a boil. Reduce heat to a simmer and cook for 15 minutes or until liquid is absorbed. Set aside.
Bring 6 cups of water to a boil. Add noodles and boil for 8-10 minutes or until noodles are soft. Drain the noodles (do not rinse) and place back in pot. Add milk and butter and stir until the noodles are coated and butter is completely melted. Pour in cheese powder and stir until all noodles are covered.
Stir in quinoa and serve up MacQuinoa and Cheese in a bowl. Enjoy!
