Ingredients

  • ½ cup butter softened
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 ripe bananas mashed
  • 1 ¾ cups War Eagle Mill Organic All Purpose Flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup chopped walnuts optional

Instructions

  • Preheat the oven to 350 degrees Fahrenheit. Grease an 8x4 inch loaf pan.
  • Using a mixer (hand or stand) blend together the butter and sugar. Mash the bananas in a separate bowl. Add eggs, vanilla and bananas to the butter and sugar mixture and blend until thoroughly combined. In a separate bowl, combine the flour, baking soda, baking powder, salt and walnuts. Fold dry ingredients into the wet ingredients until just combined. Place batter into prepared loaf pan. Bake for 60-65 minutes or until a toothpick inserted into the middle comes out clean. Let cool for at least 10 minutes before removing the loaf pan. Enjoy! Makes 12 slices.
