Ingredients

Cookies

FROSTING:

  • 1 cup powdered sugar
  • 1 tablespoon vanilla extract

Instructions

  • Cream butter and sugar in a large bowl by hand or with an electric mixer.
  • Add molasses, egg, pumpkin, and vanilla extract. Beat until well blended.
  • In a separate bowl, combine dry ingredients.
  • Add dry ingredients to pumpkin mixture and beat until smooth and well blended.
  • Cover the bowl and refrigerate until chilled (1 hour)
  • Preheat oven to 350 degrees.
  • Grease baking sheets.
  • Drop dough by rounded teaspoonfuls 1 inch apart on a baking sheet.
  • Bake 12-15 minutes. While cookies are baking, mix the powdered sugar and vanilla together.
  • Cool on rack and frost with powdered sugar and vanilla mixture.
  • Alternate frosting: Cream cheese frosting
