Kiwifruit Muffins

  • ¾ cup WEM Organic All Purpose flour
  • ½ cup WEM Organic Whole wheat flour
  • ½ cup WEM Organic Yellow Cornmeal
  • 3 tsp baking powder
  • 1/2 cup sugar
  • ½ cup vegetable oil
  • 2 eggs
  • ½ cup milk
  • ½ cup kiwifruit, peeled and chopped


Preheat oven to 400 degrees. 
Line muffin tins with paper liners.
In medium bowl, whisk together all dry ingredients until combined. Set aside.
In a large bowl, beat together oil, eggs, and milk.  Stir in kiwifruit by hand.
Add dry ingredients to kiwifruit mixture, stirring by hand until just combined. 
Spoon into muffin tins, filling ¾ full. 
Bake 15 to 20 minutes until done.
