Baking Time: 15-20 minutes
- ¾ cup WEM Organic All Purpose flour
- ½ cup WEM Organic Whole wheat flour
- ½ cup WEM Organic Yellow Cornmeal
- 3 tsp baking powder
- 1/2 cup sugar
- ½ cup vegetable oil
- 2 eggs
- ½ cup milk
- ½ cup kiwifruit, peeled and chopped
Preheat oven to 400 degrees.
Line muffin tins with paper liners.
In medium bowl, whisk together all dry ingredients until combined. Set aside.
In a large bowl, beat together oil, eggs, and milk. Stir in kiwifruit by hand.
Add dry ingredients to kiwifruit mixture, stirring by hand until just combined.
Spoon into muffin tins, filling ¾ full.
Bake 15 to 20 minutes until done.
