Apples add a touch of health to any breakfast or mid-day muffin snack!
- Preheat oven to 350 degrees. Coat a 12 – cup muffin tin with non-stick spray.
- In a large bowl add buttermilk, oats, raisins, egg whites and honey; mix until well combined. In a medium bowl whisk together flour, powder, soda, cinnamon and salt. Add to oat mixture and blend together. Fold in grated apple until evenly distributed.
- Fill prepared muffin tin ¾ full. Bake for 20 – 25 minutes or until golden and a toothpick inserted comes out clean. Cool in pan for 10 minutes then remove to rack to finish cooling.
