  • 1 ½ cup War Eagle Mill Organic All purpose Flour
  • 1 cup + 3 Tablespoons organic sugar
  • 1 Tablespoons baking powder
  • 1 cup + 2 Tablespoons butter softened (2 sticks + 2 Tblsp.)
  • 3 eggs
  • 1 egg yolk
  • 2 ½ teaspoons lemon juice
  • 1 teaspoon vanilla extract


  • 1 ½ cups powdered sugar
  • 2 Tablespoons water
  • 1 Tablespoon lemon juice


  • 3 ½ cups powdered sugar
  • 3 Tablespoons lemon juice
  • 3 Tablespoons water
  • 3 lemon zests


  • Preheat oven to 325 F. Grease a 9 x13 in baking pan.
  • In a large bowl, mix together flour, sugar and baking powder. Add softened butter, lemon juice and vanilla extract to the dry ingredients and mix until well blended. Pour batter evenly into greased 9 x13 inch baking pan. Bake 25-30 minutes.
  • While cake is baking, make the lemon drizzle by mixing together the powdered sugar, water and lemon juice. When cake is finished baking, pull from oven and let cool for 10 minutes. Poke holes all around the cake with a skewer or knife. Spread the drizzle on top of the cake specifically over the holes so the lemon drizzle seeps into the cake.
  • Let cake cool completely. Make icing by combining the remaining powdered sugar, lemon juice, water and lemon zest from 2 lemons. Spread evenly on top of the cake. Top the icing with the remaining lemon zest.
  • Serve and Enjoy! Makes 24 servings.
