Super Natural Granola Buttermilk Muffins

This is a wonderful, filling, nutritious and absolutely tasty muffin!



  • 2 cups WEM Spelt Flour
  • 3/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon cinnamon
  • 1-3/4 cups WEM Super Natural Granola, divided
  • 1 teaspoon vanilla extract
  • 1/3 cup canola oil (or you choice of oil)
  • 1 cup buttermilk
  • 1/2 cup orange juice


  1. Preheat oven to 400°F. Line or grease a 12-cup muffin pan.
  2. In a large bowl stir together the flour, sugar, baking powder, baking soda, cinnamon and 1 cup of the granola.
  3. In a small bowl whisk together the vanilla, oil, buttermilk and orange juice. Pour into the flour mixture and stir until just combined.
  4. Spoon the batter evenly into prepared pan and sprinkle the tops with the remaining 3/4 cup of granola.
  5. Bake for 15-18 minutes. A toothpick inserted into the center of muffin should come out clean.
  6. Let cool in pan for 5 minutes and then transfer to rack.

Serve then hot and fresh out of the oven with honey, sorghum, jams, jellies, spreads or just melted butter!
