Instructions

Pan Fry:

  • Dip catfish in buttermilk (or water) roll and shake thoroughly in Ensley Seasoned Coating Mix. Fill frying pan to ¼ inch of oil and heat oil to 350 degrees F. Test for readiness by sprinkling a little Ensley in the oil. If it sizzles it is ready for frying. Pan fry each fish fillet for approximately 5 minutes on each side. Fish should be golden brown. Place on paper towel or tea towel to absorb remaining oil.

Bake:

  • Preheat oven to 400 degrees F. Coat a baking sheet lightly with oil. Dip fish in buttermilk (or water) roll and shake thoroughly in Ensley Seasoned Coating Mix. Line prepared baking sheet with coated fish. Spray fish lightly with oil. Cover fish with aluminum foil. Bake for approximately 20-30 minutes removing foil during the last 10 minutes to allow fish to brown. Bake until temperature reaches 165 degrees.
