  • ¾ cup butter softened
  • ½ cup brown sugar packed
  • 8 oz cream cheese softened
  • 2 large eggs
  • 3 cups War Eagle Mill Unbleached All Purpose Flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup Apple Butter
  • 1 cup chopped pecans
  • 1 tsp vanilla extract

Streusel Topping


Apple Butter Pecan Quick Bread

  • Preheat oven to 350 degrees F.
  • Making topping first: stir together pecans, flour, brown sugar, melted butter, cinnamon, and salt.
  • In stand mixer, on medium speed, beat together butter and cream cheese for approximately 2 minutes.
  • Add brown sugar gradually and beat until light and fluffy.
  • Add eggs and mix until thoroughly combined.
  • In a separate bowl, stir together flour, baking powder, baking soda, and salt; gradually add to butter mixture, beating on low speed until just blended.
  • Stir in Apple Butter, chopped pecans, and vanilla.
  • Spoon batter into 2 greased 8- x 4-inch loaf pans.
  • Sprinkle top of batter evenly with Streusel Topping.
  • Bake for 50-60 minutes or until toothpick comes clean from the center of the loaf.
  • Let sit for 30 minutes.
  • Cool loaves, remove from pans and enjoy!

Apple Butter Pecan Streusel Muffins

  • Spoon batter into muffin cups and top with streusel topping.
  • Bake for 20-30 minutes.
  • Cool completely on rack and enjoy!
  • Makes approximately 2 dozen muffins.
