- ¾ cup butter softened
- ½ cup brown sugar packed
- 8 oz cream cheese softened
- 2 large eggs
- 3 cups War Eagle Mill Unbleached All Purpose Flour
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 cup Apple Butter
- 1 cup chopped pecans
- 1 tsp vanilla extract
Streusel Topping
- 1/2 cup coarsely chopped pecans
- ¼ cup War Eagle Mill unbleached All Purpose Flour
- 1/3 cup brown sugar packed
- 3 tablespoons butter melted
- ½ tsp ground cinnamon
- ¼ tsp salt
Instructions
Apple Butter Pecan Quick Bread
- Preheat oven to 350 degrees F.
- Making topping first: stir together pecans, flour, brown sugar, melted butter, cinnamon, and salt.
- In stand mixer, on medium speed, beat together butter and cream cheese for approximately 2 minutes.
- Add brown sugar gradually and beat until light and fluffy.
- Add eggs and mix until thoroughly combined.
- In a separate bowl, stir together flour, baking powder, baking soda, and salt; gradually add to butter mixture, beating on low speed until just blended.
- Stir in Apple Butter, chopped pecans, and vanilla.
- Spoon batter into 2 greased 8- x 4-inch loaf pans.
- Sprinkle top of batter evenly with Streusel Topping.
- Bake for 50-60 minutes or until toothpick comes clean from the center of the loaf.
- Let sit for 30 minutes.
- Cool loaves, remove from pans and enjoy!
Apple Butter Pecan Streusel Muffins
- Spoon batter into muffin cups and top with streusel topping.
- Bake for 20-30 minutes.
- Cool completely on rack and enjoy!
